I’m starting to get really anxious to incorporate other foods back into my diet. Although this program has been very effective in cutting down my sugar intake, getting me to cook more, getting me to pay attention to high quality foods, etc., I’m feeling ready to stop being so restrictive. With all the holiday treats around, this is beginning to feel more like a punishment than something positive.
I’m thinking of how difficult it’s going to be to maintain this over the holidays, especially living out of a hotel with no kitchen. I hope it’s worth it!
For dinner, one of my dear friends sent me a recipe for raw vegan lasagna. First, I made the cashew “cheese”. Don’t ask me why, but when you grind up cashews in a food processor, it actually kind of resembles a cheese flavor. I know, it’s very odd, but I get it now. The cashew cheese was mixed with onions and garlic, and this was actually my fav part of the meal. :)
I layered homemade pesto, homemade tomato sauce, zucchini slices, tomatoes, and the cheese:
